Attention…Yummy Food Ahead!

Last night I finally cooked out of one of my many new cookbooks.  My plans were to do an apricot glazed pork chops but I didn’t want to go to the store to get pork chops.  We always have chicken and fish so I went searching again and I found a wonderful recipe in Barefoot Contessa’s cookbook.  I made Lemon Chicken Breasts (however I substituted chicken breast tenderloins), baby carrots in a brown sugar buttery sauce (Dean Bros cookbook) and tomato lentil couscous.  YUM!!!!  Eric thought so, too (see his picture below)!  He said that it was a keeper.  We paired it with a rose wine which was quite good as well.  Great food shared with my wonderful husband.  🙂  Hehe.  Love that!
